2. It's Your Choice - White Heat, Michelin and Hell's Kitchen

Marco's defiance and passion are captured in his groundbreaking cookbook - 'White Heat'. It's an astonishing and at times eyebrow raising piece of work, as journalist Kirsty Bosley can see. But he's doing things his way and his alone; pushing himself to achieve a groundbreaking three Michelin stars.

Financial Times restaurant critic Marina O'Loughlin remembers the panache of his london restaurant Mirabelle, while chef Aaron Paterson recalls working in Marco's kitchen.

At the height of his ability and fame though, Marco chooses to do the unthinkable: to walk away from his hard earned stars, leaving haute cuisine behind.

He'll return in 2007 in a huge TV show - 'Hells Kitchen', which sees him once again defy convention. Contestant Adele Silva remembers taking part, cooking under the domineering but inspiring legend.

Finally, he'll hook up with a stock cube brand to make a host of instructional videos that are at times brilliant, inspiring and full of a strange wisdom that goes much deeper than food.
